
“Biobake FA Conc is a fungal alpha amylase preparation produced by fermentation of a selected strain of Aspergillus oryzae. Alpha amylase hydrolyses the alpha 1,4 glycosidic linkages in amylose and amylopectin, resulting in the production of dextrins and fermentable sugars. Biobake FA Conc is a low dust product which contains microgranular enzymes. This product is made from a natural raw material and as such may be subject to some batch to batch colour and/or odour variation, but these variations are not an indicator of enzyme activity and do not impact on product performance.”
“Biobake FA Conc is used in bread baking and is effective in the hydrolysis of damaged starch, which is produced during the milling process. Treatment with Biobake FA Conc results in the production of more fermentable sugars.
